Baked Feta and Penne Pasta

You will love this baked feta cheese with cherry tomatoes, mushrooms and penne pasta!

It's always a treat when my husband cooks, and this past weekend he made us this delicious baked feta cheese, cherry tomatoes, mushroom and penne pasta dish. It's easy to make and healthy!
Ingredients:
1 Block of organic solid feta cheese ( sold at most supermarkets and Wholes Foods).
1 container of organic cherry tomatoes
1 cup of sliced organic mushrooms
1 teaspoon minced garlic
1 box of penne pasta
1 teaspoon of oregano
Pinch of salt and pepper
Olive oil

Directions:
Set your oven at 350.
In the center of a large baking pan place the block of feta cheese, and add the cherry tomatoes around the cheese. Sprinkle some olive oil throughout and a little salt and pepper. Bake for 25-30 minutes.
While the cheese in baking, begin cooking the penne pasta. Follow directions on the box. Once the pasta is ready remember to rinse, add some olive oil and mix.
While the pasta is cooking, you can prepare the mushrooms. In a small pan, add 1 teaspoon of olive oil and minced garlic and sauté the mushrooms for about 5 minutes.
Once the feta cheese is done, carefully take it out of the oven and add the sautéed mushrooms. Gently mix the feta cheese, tomatoes and mushroom together (as seen in the video). Once mixed well, add the cooked pasta, oregano, and a little more salt and pepper. Mix well and bake again for another 10 minutes.
Once it's done, add some chopped basil leaves over top and serve.
