Healthier Home-made Apple Pie, Pumpkin Pie and Pumpkin Chocolate Chip Cookies!!

Some healthier versions of some of my favorite holiday desserts!!
Apple Pie
3 McIntosh apples and 3 Granny smith apples sliced ½ inch thick
3 tablespoons of Oat flour
½ cup honey
½ cup light brown sugar
1 lemon juice
1 teaspoon cinnamon
1 teaspoon vanilla
½ teaspoon salt
2 tablespoon coconut oil
1 Pre-made pie crust
In a large pan add the coconut oil and saute the apples for about 2 minutes. Add the oat flour, honey, sugar, cinnamon and vanilla extract. Mix and saute for another 2 minutes. Add the mixture to a pre-made pie crust. Bake at 350 degrees for 45 minutes to 1 hour.
Pumpkin Pie
16oz can of Pumpkin Puree
½ cup of honey
2 teaspoons of pumpkin spice
12 oz can skim evaporated milk
9” pre-made pie crust
Mix the ingredients in a bowl and add to pie crust. Bake at 350 degrees for about 45 minutes.
Pumpkin chocolate Chip cookies
16 oz can Pumpkin Puree
2 Large eggs
3 tablespoons of honey
1 teaspoon vanilla extract
2 cups Oat flour
2 teaspoons of baking soda
2 tablespoons of light brown sugar
1 teaspoon of cinnamon
1 teaspoon pumpkin spice
1 cup dark chocolate chips or chunks
In one bowl mix the pumpkin puree, eggs, vanilla, light brown sugar and honey. In another bowl mix the flour and baking soda. Combine both mixes and add the cinnamon, pumpkin spice and chocolate chips. Mix with a spoon. Bake at 350 degrees for 6-8 minutes.
