Homemade Nut-Free Granola Bars

I'm always baking at home with my kids. Not only do they love it, I love that it teaches them to be mindful of making healthy choices even when choosing treats. Us baking (or cooking) together makes them more aware of the fresh and natural ingredients we get to add instead of not knowing what's in a product, and it's the safest way for us to avoid ever running into having NUTS. Unfortunately, my kids and I are allergic to all tree nuts and peanuts, therefore, even the healthiest bar out there, is one we wouldn't eat for the fear of having a bad experience.


The following is the recipe for our Homemade Nut-Free Granola Bars. Please keep in mind that there are ingredients such as coconut and pumpkin seeds added to this recipe. Thankfully we aren't allergic to coconuts and raw seeds! Seeds are a great source of fiber, and contain healthy monounsaturated fats, polyunsaturated fats and many important vitamins, minerals and antioxidants. This recipe also calls for flaxseeds. Just one tablespoon of ground flaxseeds provides a good amount of protein, fiber and Omega-3 fatty acids. When consumed regularly they all help lower cholesterol, blood pressure, blood sugar and promote heart health.



The seeds I purchase are always raw and may not be manufactured in facilities where tree nuts or peanuts have been processed. Please feel free to remove or substitute any of these ingredients. Sometimes we even add dark chocolate chips, and/or protein powder.

Recipe:

2 cups of Organic Oat flour (or wheat or rice flour)

1 cup of Organic Old-fashion rolled oats

1/4 cup of ground flaxseed

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp cinnamon powder

1/2 tsp ground ginger powder

1 tsp vanilla extract

Pinch of salt

1/2 cup Organic honey

1/2 cup of Organic unsweetened applesauce

2 tablespoons of Organic Coconut Oil

1/4 cup of raw pumpkin seeds/pepitas (or sunflower seeds or chia seeds OR all three!)

1/4 cup of dried cranberries (or raisins - whole or chopped)

Mix all ingredients together. Press into a 9x9 inch greased pan. (Please note that the mixture will be crumbly.) Bake at 325 degrees for 20-25 minutes.

Once baked, take out and let fully cool before consuming. Enjoy!! :)
