Apple Pie - LiYa Life Style

The holiday season is officially here! Our most favorite time of the year. And while there will be several people missing at our dinner table this year due to the COVID-19 pandemic, one thing that won't be is our traditional meal and our favorite desserts!
I don't care for many desserts, but I will never pass up some apple pie! I'm not sure why I love it so much, but my guess is that it must be the sweet and cinnamon tastes of the warm apples along with the warm flaky crust, when paired with just the right amount of coconut ice cream (for me) is the perfect combination of warmth and coolness in every bit :). Of course, I had to go and create a healthier version, but don't worry, my kids can vouch for it being super delicious and a must have dessert for any holiday dessert table.
To create a healthier version, I substitute white flour with oat flour, but you can use white flour, coconut flour or rice flour if you prefer. Instead of refined white sugar, I use light brown sugar as well as honey and often have added a little syrup. I have yet to perfect my home-made pie crust, so I use a vegan pre-made crust from Whole Foods, but you can use any of your choice.
Pie crusts usually come 2-4 in a package, therefore I use one of them for the top layer of the pie. I remove the defrosted crust from the pan and lay it down on a little bit of flour. Using a rolling pin, I even out the dough then I cut out strips using a pastry cutter. The strips can be any size you wish and don't be afraid to get creative. Another cool way is to use cookie cutters to create your design instead of the strips, and lightly overlap them over top of the apples.
Apple Pie Recipe:
3 Macintosh apples
3 Granny smith apples
Apples peeled and sliced ½ inch thick
3 tablespoons of Oat flour
½ cup honey
½ cup light brown sugar
1 lemon juice (you can use 1/2. We prefer a little extra lemon)
1 teaspoon cinnamon
1 teaspoon vanilla
Pinch of salt
1 tablespoon coconut oil or coconut butter
1 Pre-made pie crust (I use a vegan pie crust)

In a large pan add the coconut oil or butter, then the apples. Saute' them for about 2 minutes. Add the oat flour, honey, sugar, cinnamon and vanilla extract and lemon juice. Mix all ingredients well over medium heat for another 2 minutes. Add the mixture to a pre-made pie crust. Cover the pie with your pie crust strips or other designs, then brush a little coconut oil or butter over top. Bake at 350 degrees for 45 minutes to 1 hour. Serve warm alone or with your favorite ice cream. Enjoy!
