Linguine and Caesar Salad with marinated Artichokes and Capers.




This quarantine might be a major carb fest for many (speaking for myself!) but who can say no to a super delish caesar salad and linguine combo - not me!


The truth is, in the last few months I've (we've) eaten way more pasta than ever before, which has made me become a lot more creative on making pasta dishes. I love mixing different kinds of food together to create a great meal, and this salad/pasta dish is likely my most favorite mix ever! It's quick, easy and healthy.


Recipe:


While I used linguine, you can use any pasta of your choice.


Chop romaine lettuce (rinsed and tap dried)

1 teaspoon of capers

1/2 a jar of marinated artichokes (I like to saute' them a little for warmth).


Caesar dressing:

3 tablespoons of Dijon mustard

2 teaspoons of extra virgin olive oil

1/2 small lemon juice

1/2 teaspoon minced garlic

Mix all ingredients well. Adjust any ingredients to your liking.


In a large bowl, add romaine lettuce, cooked pasta, capers and artichokes. Mix. Then add the caesar dressing and mix well.


Optional: Add some parmesan cheese shavings over top.
