LiYa Life Meals - Asparagus

Asparagus with Lemon Zest Veggie Mix.



This asparagus mix is not only full of nutrients, it's super delicious and so easy to make. While not pictured here, you can add it to brown rice, pasta, quinoa, over a salad or just as is.


Cooking asparagus can be a little intimidating because if you over cook them they become a bit slimy, but they really are easy to make. Whether you cook them alone or along with something else, just remember all they need is about 5-7 minutes of cooking time and they'll still keep their crunch. That's why you'll notice I add them in last in this mix.


Below is the recipe, and as I always mention, do add or eliminate any ingredient.



Ingredients:


Bunch of Asparagus (cut off tough ends, then cut in half)

3-4 Diced carrots

1 cup Chopped Broccoli

1 cup Chopped Cauliflower

Small onion diced

Bunch of parsley chopped

Bunch of cilantro chopped

1 teaspoon minced garlic

1/2 teaspoon oregano

1/2 teaspoon turmeric powder

1 teaspoon of Extra Virgin Olive Oil

1 small lemon (for zest)


Instructions:

Add the olive oil to a large pan (or skillet) over medium heat.

Add chopped broccoli, cauliflower and carrots. Saute' for 7-10 minutes.

Add parsley, cilantro, onions, garlic, oregano, turmeric powder and asparagus. Cook another 5 minutes mixing well.

Add lemon zest from 1 small lemon and pinch of salt and pepper (optional) mix well.
